A delicate and delicious dish that the whole family loves.

Corn Puddin'

Prep time 15 minutes

Bake 1 hour 20 minutes

Preheat oven 325 degrees F. Butter or line a 2 1/2 quart baking dish with parchment paper.

Combine and pour into dish:

3 1/2 cups fresh or frozen corn

6 eggs, beaten

2 1/2 cups evaporated milk (or a mix of fresh and evap.)

3 T. melted butter

3 T. whole wheat pastry flour

1/4 cup finely chopped onion

1/2 cup finely chopped green bell peppers

1 tsp salt

1/4 tsp. black pepper

1/4 tsp paprika (or cayenne)

optional-dab of honey to sweeten

Bake 325 for 20 minutes, then stir through. Continue to bake for 1 hour until pudding is golden brown and a knife inserted comes out clean. Serve as is or with salsa or sourcream.

Tip-If you use honey, dissolve it in the melted butter before stirring it in. Add any cooked meat or veg you like to make the recipe your own!
