Started the day a little nervous.  I did no (zero) prep work for the challenge and our fridge was a bit bear.  Had to be creative & was amazed to rediscover the wonders of my pantry...

 

  • Morning:  2 Soft Boiled Eggs, Plain Oatmeal with 2 tsps brown sugar, 2 cups Coffee with 1 TBS Whole Milk
  • Lunch (had to get creative): Baby Spinach Salad with Homemade Maple Tahini Dressing.  Rounded off with homemade croutons (courtesy of stale baguette) & garden cherry tomatoes.
  • Snack - 1/2 cup of my son's Frozen Banana/Spinach/ Coconut Water Smoothie.  1/8 cup Walnuts
  • Dinner - 4 oz Organic Rotisserie Chicken & same salad as lunch (less croutons).
  • Dessert - 3 Animal Crackers (courtesy of my son) & Earl Grey Tea with 1 TBS Whole Milk

 

Walked briskly to my son's preschool & back.  Took an hour (clocked around 5000 steps - guestimated because my Fitbit is MIA) I'm considering a daily, early morning walk before the beast wakes up,  that way if I don't meet cardio goals later in the day, I won't feel guilt..  May get inspired & make Vitenamese Fresh Spring rolls for tomorrow with the left overs, or I may just watch something Netflix  & beg a foot rub :)

  • 1 TBS Tahini Paste
  • 1 TBS Balsalmic Vinegar
  • 1 tsp Dijon Mustard
  • 1 tsp Agave Maple Syrup
  • Sea Salt to taste
  • 2 TBS Water
