Wednesday seemed to be a better day for me than yesterday. I'm glad that I'm keeping track on Sparkpeople so that I can go back and take a look at what I'm eating and my hunger level, etc. from this blog.
I really wasn't hungry today, and I was able to keep my goal of 1000 calories.
To start, I riced some cauliflower. If you don't know what that is, you use a cuisinart to chop cauliflower into tiny pieces, about the size of rice. It doesn't taste like rice at all, don't be fooled, but it does allow you to use it where would use rice or potatoes, etc for a different texture.
So I had riced cauliflower and an egg white omelet for breakfast, and that kept me full pretty much until around 12:45pm when I had the rest of the veggies.
I'm going to try different ways of preparing veggies--cauliflower in particular because it's so versatile and filling.
I didn't eat much for lunch and so for dinner I was able to eat a very filling dinner of hamburger helper along with a slow churned 1/2 cup of ice cream. Yay me. 1000 calories and full almost all day.
