Gearing up and getting everything sorted to do my batch cooking Wednesday. Going to be cooking 32 servings of Chicken & Dumplings, 12 servings of Baked Potato Soup, 8 servings of broccoli cheese casserole, 12 servings LC PB Fudge, 15 servings Chicken & Veggie soup, 8 servings LC Chili.
All in all I need 164 oz chicken, 32 oz beef, 24 slices bacon, 11c shredded cheddar cheese, 18oz cream cheese, 1c sour cream, 12c milk, 2/3c margarine, 14tbsp butter, 1/2c unsalted butter, 3c heavy cream, 42oz frozen broccoli, 4 large baking potatoes, 1.5c onions, 2c peppers, 5 cans biscuits, 18c chicken broth, 1 can rotel diced tomatoes and chiles, 3 cans cream of chicken, 4c beef rboth, and 1/2c natural peanut butter.
Wow!
I am going to be going to Kroger Tuesday morning after work to get all of this. I created a budget of $100/week for groceries but this is for 12 days of food and will only cost $110! That will even leave some butter, milk, and cream extra. plus a few blocks of cream cheese.
Overall I am pleased with the prices. I may have to do this more often.
Only downside is that I don't have enough storage containers. So...I went on Amazon. I found some 16 oz and some 24oz storage containers and bought then. That cost me $28 for 72 16oz containers that will be perfect for freezing soups, too! It is the Reditainer brand and I read the reviews and found that they are good for not leaking - exactly what I need! It will be a tad difficult to get the lids off due to how tight they seal but I would rather have that than leaking soup! If I really like these I may buy some more of their containers like the 32oz to make some chili to freeze and some chicken veggie soup.
I will post pictures of the foods as I finish them and if anyone wants the recipes I can give you a link to them on Sparkpeople once I make the recipe public.
I know that the fridge is going to have to be cleaned out in order to make room for all this food! It needed done anyways. Lots of stuff in there I never use any more. Tuesday night is cleaning time! whooooo!!!
