Messy-Looking but Good Tarragon Egg White Omelet

2 servings, 110 calories apiece

 

I split this with the hubs:

 

2 teaspoons olive oil

tablespoon diced white onion

5 egg whites, iightly beaten

1 oz parmesan cheese

tablespoon chives

teaspoon tarragon

salt, pepper to taste

 

Pour the 2 teaspoons olive oil into a skillet on medium-to-high

Fry the diced onion for a minute and a half.

Pour the eggs on top and turn temperature down to medium

Pour the chives, parmesan cheese and tarragon evenly on top of that.  Cook for one minute.  Turn over with a spatula and cook one more minute.  Serve.

Salt and pepper according to how much salt and pepper you like.
