Juanita, I understand the need to keep things simple, and I want to caution you about going too sparten. In order for this to work long term you need to change your lifestyle, and I fear that with so few options you'll either blow a day and give up or, once you've reached your goal, go back to all your old habits. That has certainly been my past experience. What you've got written is sound, and I encourage you to consider a little more variety. Also, I highly recommend Chris Powells carb cycling books. He makes a great argument for a diet that can become a lifestyle. Good luck!
