I’ve been a vegetarian for over a decade and recently went into full vegan mode. It’s for a lot of reasons, mostly sustainability. If anyone would like to talk about veganism with a scientist (as opposed to the cliché anti-science, woo-loving, hippy) I’m game, but I try not to fuss about it too much on here in general.
So, being a plant based type eater I naturally tend to eat lots of vegetables. Doing this diet bet has caused me to really look at what I’m eating, more than I have in a few years. It’s easy to get into habits and drift away from some healthy things. So, I’m sure I get at least 4 servings of vegetables a day (plus a fruit or two) but I can do so much better! I know there have been times in my past where I had 10 servings of vegetables a day and my energy was always through the roof then.
So my challenge to myself until the end of this first round of the diet bet (and hopefully beyond) is to include vegetables in every meal. That’s rough for me at breakfast. Does anyone have good “breakfast vegetable” ideas? I have spinach and zucchini and carrots if I’m doing something like a tofu scramble but that’s rare. I tried carrots in oatmeal once (it was okay). I just ate some raw sugar snap peas this morning. I need more variety!
