Foil Baked salmon
This can be a main dish served with vegetables and a grain, such as brown rice.
Ingredients:
1 cup 1 Tb |
Onion, finely chopped Oil |

1 cup 2 ¼ cup 3 Tb 2 Tb 1 Tb 4-6 |
Low-salt chicken broth Garlic cloves, minced Sour cream, low-fat Whole grain Dijon mustard Fresh chives, chopped Fresh tarragon, chopped Salmon fillets |

Directions:
- Heat 1 tablespoon of oil in a large skillet over medium-high heat.
- Add onion and sauté until onion turns golden, stirring frequently (about 5 minutes).
- Stir in broth, mustard, and garlic.
- Boil mixture to blend flavors. Reduce heat and whisk in sour cream. Then, stir in chopped chives and tarragon. Season with salt and pepper.
- Season salmon fillet with mixture and wrap salmon in foil, cooking in oven at 425F for 15 minutes or until just cooked through. Internal temperature of fish should be 145F.
