Earlier today I posted a picture of these protein bites that I made and received such an awesome response to it (mostly requests for the recipe) so I thought I would share it here. I always make these bites because they are easy, affordable and I know exactly what is in them.
I don't eat them every day but when I do, I have 3-4 of them with a piece of fruit. These bites are very dense so you don't need very many to feel satisfied.
I've tried a whole bunch of recipes in the past and have combined what I've liked them into the below reciple. This is a very forgiving recipe so you can add/omit as your heart so desires. Sometimes I add dried unsweetened cranberries or raisins into it and other times I swap out peanut butter for almond butter.
Here is my go-to recipe for the protein bites you see in the picture ...
Ingredients:
1 cup of rolled oats
2 scoops of chocolate protein powder
2/3 cup of unsweetened coconut flakes
3/4 cup of peanut butter
1/2 cup of ground flax seeds
1/2 cup of semi-sweet chocolate chips
1/3 cup of organic honey
1 tbsp of chia seeds
1 tbsp of vanilla extract
Directions:
1) Stir all of the above ingredients together in a bowl, cover and put it in the refrigerator to chill for 30 minutes
2) Once chilled, use a tablespoon to roughly measure out the mixture, roll into balls.
3) Store in an airtight container in the fridge for up to one week.

(disclaimer - I can usually get between 33-35 balls when I use a tablespoon to measure it out so the nutritional information is based on 35 balls)
