If you LOVE PIZZA read this - SO worth it.

 

This is the recipe for healthy pizza. The crust is made from cauliflower, which sounded gross to me because I hate cauliflower, but you can't even taste it! I have been making this for a couple of years now and people have told me it is the best pizza they have had (crazy!), that they never would have known it wasn't normal pizza, etc. I love it!! 

What you need:

-          1 Head of cauliflower

-          1 egg

-          1-3 cups of any cheese you want

-          any seasonings you want - I use an intalian blend and garlic powder - probably 1 tbsp total

-          any sauces and toppings you want - I make 1 buffalo chicken pizza and 1 pepperoni pizza

-          *optional* parchment paper, I just rub olive oil on my cookie sheet and it works fine without the parchment paper

Steps:

  1. Preheat oven to 450
  2. Chop cauliflower to put in food processer & process – it should look a little smaller than rice
  3. Place cauliflower in a microwave safe bowl, cover, & microwave for 10 minutes (it might be a little stinky, but the smell goes away)
  4. Once cauliflower has cooled enough to touch but is still warm, place into a towel and ring out as much moisture as possible (I use two towels for this)
  5. Add the egg, your spices, and 1.5 cups of cheese to cauliflower and mix (I just use my hands)
  6. Place mixture on oiled or parchment papered cookie sheet and shape. It should only be ½ inch thick or less!! Too thick and the texture will not be good.
  7. Bake for 25-30 minutes, or until the crust is golden brown and crispy on the edges (over cooked is better than undercooked in this case, so don’t be afraid to bake it too long)
  8. Take crust out and add any sauces, cheeses, and toppings you want – and as much as you want! (remember to be healthy ;))
  9. Put back in oven for about 5 minutes – or until the cheese is as melted as you want it
  10. EAT IT!!

Seriously, I crave this pizza now. Also, the cauliflower expands or something in your belly and you don’t eat as much as you would normal pizza!

- cooked and chopped chicken breast

- frank's buffalo sauce

- finely chopped celery 

- mexican blend cheese & italian blend cheese

Pepperoni Pizza:

- marinara sauce

- turkey pepperoni

- italian blend cheese
