I love Nutty Quinoa Hash - easy to find through google. Sweet potatoes, fall veggies, quinoa and 2 tbs peanut butter make a satisfying, hearty, vegan meal that's high in protein and reasonable in calories. Try it out - it tastes even better on the 2nd day!
