So, these are meals I eat regularly:
Stir fry, I fry whatever veg I'm using in a little coconut oil (usually kale, pepper and onion), remove from pan, cook the meat (I usually have steak with fat cut off), then add a tsb of stir fry paste (I use lee kum kee garlic black bean sauce) and stir the veg back in, cook for a minute or 2 more then service with brown rice
Skinless chicken breast, topped with a little Harissa paste, or a bit of humous and baked in the oven along with veg in a little coconut oil - I use tomatoes, onions, aubergine, courgette and sometimes sweet potato - it's so easy because you put it all in 1 dish and just cook in oven for about 40 minutes. Depending how much veg I've put in the oven I might have some steamed kale or brocoli with it as well.
I'll make a big batch of chilli com carne (http://www.bbcgoodfood.com/recipes/3228/chilli-con-carne) the recipie is pretty simple, then I'll get loads of meals out of it - serving it with brown rice, or sweet potato (baked or wedges)
http://www.primaverakitchen.com/ground-turkey-sweet-potato-skillet/ this is a great quick and easy recipie, I'll make a batch and skip the last step of baking in the oven - then I just put a portion in the oven when I'm ready to eat it.
Sometimes I'll make spag Bol with sauce from a jar (check the ingredients though!) and serve with thinly sliced boiled cabbage instead of pasta and some grated cheese
