I've tried to be good, mostly I have been successful, but darn it NACHOS are calling me. Can you hear them or is it just me?
I love NACHOS. I grew up in the Midwest where we didn't have anything Mexican except when Taco Bell came to town when I was in late high school. (okay, showing my age here). We didn't have Chinese food places, basically we didn't have a lot of ethnic places except Italian. One of my friend's Dad was in the military and at one time they had been stationed at El Paso and she learned how to make Chile Con Queso. OH MY GOSH! I was 13 and I think it was my first love. (okay, maybe that is a bit dramatic). Anyway, you get the idea. From then on I was determined to learn about Mexican food (okay well probably the American version of it, for instance I made the queso dip with Velveeta and Rotel tomatoes. LOL).
One day, and I don't remember when I discovered NACHOS. Those little triangles loaded with cheese and beans and goodness. At this point I didn't like avocados (that changed quickly!) so I didn't do the guacamole thing. Of course, now NACHOS are chicken or beef, beans, cheese, sour cream, green onions, guacamole, tomatoes and EXTRA JALAPENOS (I could eat a bowl of jalapenos by themselves, I love those little suckers). Anyway, I digress so I discovered these little triangles of crunch and gooey and hot and yummy and everything all rolled into one.
So, of course now I'm not eating them and I MISS THEM. I am determined to count out 14 chips (the serving listed on the corn chips), then I'm going to get some fat free "refried" beans, tomatoes and an ounce of cheese (that will kill me because cheese is another one of my failings) and make some of those darned nachos. I might even add some grilled chicken. OH yes, and a LOT of jalapenos.
I wanted to wait till next month when we go to Disney because the Coronado Springs Resort has a food court restaurant that makes some of the best nachos, but I can't wait. Those triangles of goodness are calling me.....
