Disclaimers: I don't like soup, especially not CREAM soup. 

However, one day I found myself offered cream of leek soup. I was dreading it. I didn't want to offend anyone by turning it down, so I prepared myself for the worst...and was pleasantly surprised. 

Since then, I've been making cream of leek at home. The recipe I use is found here: Cream of Leek

I have made changes with spices to give it a bit more flavour so feel free to try out new things. I will say that if you are using dairy, you may want to cut down on the butter a bit so it's not overpowering.

I purposely didn't offer my husband any of the last batch I made because it was just so delicious. No soup for him.
