Are you tired of all that wintery darkness and cold weather? Do you need a packed lunch that doesn't require heating up? Go for my healthy vitamin packed PASTA SALAD with triple the amount of fun vegetables :)
(nutrients and ingredients down bellow):

To make 2 (giant) portions of salad you need:
- 1 tsp olive oil
- 100g raw pasta (I choose wholewheat rye pasta)
- 4 spring onions
- yellow, red and green bell pepper
- 100g cucumber
- 300g cannellini beans (or other beans of your choice)
- 100g lettuce of your choice (I use "lamb lettuce")
- herbs/spices of your choice (I prefer coriander, cumin)

Boil the pasta with a pinch of salt according to the instructions, rinse it and let it cool.

Finely chop spring onions, dice all three bell peppers and a cucumber, and rougly tear the lettuce.

Mix cooled pasta with vegetables, add the beans, season well with salt and herbs of your choice. Add a tsp of oil and mix very well.

OPTIONAL:You may also add some olives and/or cheese. Just remeber to count it in your calories.
