My lunch is pretty much as predictable as my breakfast.
Each day at lunch, I eat around 4 to 5 oz of protein and about a pound of raw veggies with 1 1/2 tbsp of home made vinaigrette.
Since I do IF, this is the thing closest to supper. Since I'm bringing lunch to work with me, I opt for things that re-heat well. Chicken, in various forms, is generally one of the easier things to reheat, though I will do other meats as well. The most usual suspects are:
- Nom Nom Paleo chicken thighs
- Costco rotisserie chicken
- Roasted pork ribs
- Seared steak that I eat kind of like beef tataki
- Different kinds of canned fish, like tuna, salmon, and sardines
I bought a toaster oven for our office since that reheats these things WAY better than a microwave does. Done in a toaster oven, most of these things are a reasonable facsimile of what I'd originally made.
I've ordered a sous vide thingie, so I'm really looking forward to using that and opening up some additional options like chicken breast and pork chops!
My daily lunch comes in between 400 and 600 calories, typically being made up of around 55% to 60% calories from fat, 30% to 35% from protein, and 7% from carbohydrates.
