Thanks (and extra thanks for that last tip)! Do u puree the sweet pots or just chop em and leave the chunks? gonna try this out soon!

You probably could, although I'm not sure what the texture would be like. I chopped them up into a tiny dice (the egg muffins are tiny). I've also shredded them before (using a cheese shredder) and sauteed them that way.
