I finally took the plunge and ditched cereal for breakfast. This was really difficult as it has been a years long habit I have always hung onto. Now finally the reason for doing it is more on principle that if I can do this, I can move beyond my comfort zone in other areas too.

So the question now is, what to eat? I just tried a delicious combination that I think is a winner for one option:

  • One whole egg with sauteed spinach, spring onion and mushrooms accompanied by 1/3 avocado mashed with cilantro and sprinkled with cumin powder, spread onto one Wasa cracker

 

I see so many great meal plans in magazines but they DON'T seem to be geared towards smart shopping. I also work full time and have kids in extra mural activities which means that we only come together for family cooked meals on weekends. It doesn't make sense to burn myself out on a different set of ingredients every night trying to put a meal together for myself!

Well starting with just the breakfast food has led me down other alleys ... I can boil whole eggs to toss over tuna and greens for a healthy salad. I can accompany that with a couple Wasa crackers. I can mash avocado to dollop on low fat turkey chili from Fit Station and I can add spinach to a quick and easy chicken stir fry using perdue individual fresh chicken breasts. So one idea has led to others that also makes shopping easier and the burn in my wallet less.
