Ok so my new challenge hasn't officially started yet, but that's no excuse not to eat healthy! I'm finally back home after visiting with family, and it's so cold here that we just had to use the oven. We made a "quinoa bake" with tomatoes and mixed vegetables (adapted from this recipe). Very delicious, plenty of protein, and super filling with a side of salad. I'd definately recommend it!
Can't wait for the real challenge to start!
