I did it! My goals for today (besides being gluten and sugar free and staying in my WW points) were to drink 64 oz. of water and to take a walk. The walk was nice - very beautiful weather today. I succeeded with the water, but it was hard for me. I really had to start chugging tonight. On the upside, I think it's helped me stay fuller.
Some other good news is when I weighed in for the Jillian Michaels challenge this morning, I discovered I'd lost 4 lbs since Friday! That made me super happy.
For dinner tonight I made a pork loin in a honey mustard marinade, green beans, beets, and baked sweet potato. In general I like pasta dishes, casseroles, soups and other one pot dishes, but lately I'm really into a nice, quality protein and lots of veggies that fill up most of the plate. It's just helping me feel full - and I get to check off the fruit/veggie checker on the WW app which oddly thrills me. Go figure.
Really I just want to make it to my WW meeting on Friday still going strong so I can see a 5 lbs. loss. I know this won't be a typical loss rate, but I'll enjoy it while I can. I'm eating plenty.
Oh! I also made a banana bread recipe with gluten free flour and I was SHOCKED and at how delicious and moist it is. Seriously. So. Good. I was shocked because I've tried buying many different brands of sandwich bread and they're all just awful. I thought I was doomed to crummy, dry bread. Actually, I'd just given up altogether. But lo and behold! I made a cornbread last week with that flour and it also turned out well too. Maybe the key is just baking from scratch?
