I've mentioned before that I have a very loving husband of a solid 3 months and two teenage step children. We share the kids' time between their mom's and our house evenly.  With that said, we are generally kid free on Tuesday. So, it's Tuesday Night Date Night!  Woo!

On tonight's agenda: the husband and I are going to rock out at the gym, head over to the grocery store to grab what we need for the week (err... 4 days), and then make dinner together and probably watch baseball.  He's being really awesome this week and not even making faces at the dinner plans I put together.  Bonus: he approved of all meals!  It may have been because of the promise of tacos on Friday - his fave!  Kids both started sports practices this week and, for me, it's so much easier when you know what you are doing for dinner instead of scrambling.  But enough of that.  It's Tuesday.  It's Date Night.  It might not be the most exciting date night that we have ever had, but - hey - it is what you make it!  

Now that I am in my 30s, I have been much more open to trying new, healthier things that I never would have touched before because of the name or because I think it would probably be gross.  In the last six months I have learned that I like zucchini, spaghetti squash, brown rice, quinoa, almond milk, crab legs (sans butter), and even mild white fish.  Tonight's menu is fish.  I am ASTOUNDED that he agreed to this... but happy!  We've never made fish at home before, so it's a learning experience for both of us.  Plus, if he doesn't like it, he can figure out something else.  If I was cooking for four, it'd be a little tougher if 75% of us dislike it.  Ever deal with a ravenously hungry carnivorous teenage boy?  Yikes.  If I had a video for you all to watch his devour his meatball sandwich last night AND then half of his sister's, you'd understand. (P.S. I did not have a meatball sandwich.)  Anyway, I am looking forward to tonight and potentially adding something new into the dinner rotation - at least even if it's just for me when I'm on my own.  

Do you guys have any good recipes for cooking fish? What is your favorite healthy food that you love now but were super weary about before? I'm pretty sure mine is spaghetti squash.  I almost don't miss real pasta.  (True story.)
