I really wanted melted cheese this morning so I found an alternative. Scrambled eggs. Simple, easy and delicious.
This is what I did.
1 egg
2 egg whites
1/8 cooked Qunioa
50 gr feta chesse
3 slides chicken ham
1 small tomato
4 green olives
Little bit of leek
handful of spinach
fresh parsley
salt and pepper
Cut everything into litle pieces. Whisk the eggs together and add salt and pepper. Put a little bit of coconut oil on the pan and fry the chicken ham, leek, tomatos and spinach. When it's getting cooked you add the rest until the eggs are readdy. Thats it!
So in this case I really wanted to use these green olives, they are high in Calories but it's fine if the other meals are lighter. So the meal was 471 Cals but without the olives it would be 371. You can of course put what ever you like in you scambled eggs just be careful that is doesn't become to much.
