It seems that chili has been on the menu for a few players, so I thought I would share the recipe I use. 

As a disclaimer, I used to hate chili. It's too spicy and meat-y, and bean-y. Then my sister made me this recipe. And it changed everything. Since it's not her recipe to share, I wasn't really comfortable posting it...until I scrounged the internet (that's right, the whole thing) to find the recipe so I can share it. 

And yes, it's still bean-y. But it's more sweet than spicy, and it's vegan. Woot woot!

I refer to this as the chili that changed everything. Ok, maybe I'm being a titch dramatic. For meat lovers out there, my husband adds beef to his and cuts down on the beans a bit. 

Sweet Vegetarian Chili (AKA the best chili ever)



19oz can of chickpeas
19oz can of red beans
28oz can of diced tomatoes
11/4 cup of corn
2 carrots diced
2 garlic cloves chopped (I put more)
1 red onion chopped
1 green, 1 red, 1 yellow peppers chopped* 
1 cup ketchup
1/4 cup maple syrup (I omit this to limit the sugar)
3tbs chili powder
1/2 cayenne pepper

Throw it all in a crock pot and cook on high for 4 hours. 
 
*I only add the peppers in for the last hour because I don't like them mushy.
