I just made BUCKWHEAT PANCAKES for a power and treat breakfast on the weekend :)
(nutrients and ingredients down bellow):
To make 10 pancakes you need:
- 2 medium eggs
- 70g of buckwheat flour
- white yogurt of your choice (preferably not extra fatty)
- 1 tsp baking powder
- 2 tsp of honey
- 250g frozen raspberries
- pinch of cinnamon
- 2 tbsp fiber (optional)
For batter beat eggs with a tsp of honey, add yogurt, buckwheat flour and baking powder. Let it rest for couple minutes and then fry on a nonstick pan for 1-2 minutes (medium-low heat) on each side.
For the raspberry sauce mix raspberries, cinnamon and honey in a pot and bring in to boil. Take if off the heat and optionally add the fiber (it adds needed nutrients AND thickens the sauce.
Serve with a spoon of yogurt and dash of cinnamon. Portion size 4-6 pancakes.
