My boyfriend and I made this recipe the other night and it came out DELISH, so I just had to share!
Ingredients:
1 Speghetti Squash (Cut in half, scoop out seeds and disguard, or set aside to bake later for a snack!)
1 Jar of Marinara ( look at the ingredients and make sure they are whole foods-- no sugar added.)
1 package of Chorizo, TVP, or any kind of crumbly protein you prefer ( We used Trader Joe's Soy Chorizo --http://media-cache-ec0.pinimg.com/736x/cb/d3/57/cbd357823f61d1877f38feb4172ab1e4.jpg which also has a little kick to it!)
1 Stalk of Brussel Sprouts
Olive Oil
Salt and Pepper to taste
This is easy! Cut the Speghetti Squash in half and lay the halves face down on a baking sheet with a thin layer of water covering the bottom. Preheat the over to 450, and pop the squash in the oven for about 45 minutes or until tender. (You can also cook speg. squash in the microwave if you prefer!)
While that is cooking, simply heat up the marinara, and toss in the chorizo to warm it up, very low heat. (You've got time, silly!)
Meanwhile, pop those sprouts off the stalk and wash 'em up! Chop those little suckers in half, and throw them in a baking dish. Use 2 tbsp olive oil and drizzle over the brussle sprouts. Sprinkle a little salt and pepa' on top, mix it up with your hands, and throw that dish in the oven with the squash to crisp it up! You wanna go for that crispy, carmalized look.
Once that oven beeps, take your squash out of the oven, and cafefully scrape the meat of the squash with a fork to create "speghetti" like strings.
Toss the squash in a bowl and serve on a plate topped with your chunky marinara, and a side of crispy baked brussle sprouts!
