I made this last night and it was DELISH! I think I finally perfected my recipe- hope you enjoy!
Ingredients
1/2 head cauliflower
2 tsp Italian Seasoning
1/2 tsp garlic powder
2 tsp chopped fresh garlic
1/2 cup fresh graded Romano or Parmesan cheese
1 egg
1. Purée cauliflower in a food processor or blender until there are no large chunks. Place in a microwave safe bowl with 2 tbs of water & cover with cling wrap. Microwave for 8 min or until tender. Then cool in the fridge and pat dry of moisture. (I used a cheese cloth to squeeze out excess)
2. Preheat oven to 450F & line cookie sheet with parchment paper.
3. Combine all dry ingredients with the cauliflower purée. Scramble egg and fold into cauliflower mixture until well combined. (Results best if this is made the day before)
4. Place on lined cookie sheet and press out to about 1/8' (I used a second cookie sheet to press down evenly)
5. Bake for 15 min or until ended are lightly golden. Flip crust (tip:place a 2nd lined pan over crust and flip quickly) and bake for 5 min or until desired crispness.
6. Top with favorite pizza toppings!
Suggestions: marinara, fresh mozzarella, grilled veggies and Parmesan cheese (pictured)
OR homemade pestlo with garlic, sliced tomato, fresh mozzarella, garlic and basil
OR pizza burger-brush crust with Dijon mustard, top with ground turkey, marinara, low fat cheese blend, sliced tomatoes. Top with shredded lettuce after baking.

Sign in to CommentUpdate!!! You DONT have to steam cauliflower!! Go ahead and puree cauliflower when you first bring it home and store in it an airtime container with paper towels until you are ready to use it. Follow the rest of the recipe! ENJOY!!
