I've been starting my mornings out with kale smoothies. I'm not an advocate of juicing - in fact, I think juicing is a great way to gulp down a bunch of sugar. That's why I make my smoothies in the Cuisinart, not with a fancy blender. This means that the fiber in my fruits and vegetables isn't completely decimated. 

The other problem I have with smoothies is that they leave me hungry after 2 hours. I've solved that by substituting plain nonfat Greek yogurt for a milk substance, which gives me a little kick of protein. Oh, and Chia seeds for fiber and magical amino acids. Here's my complete recipe, which makes enough for a big tall glass. 

 

Emily's Kale Smoothie

1 cup kale, stems removed and washed

1/4 cup fresh mint

1 apple (cored)

1 orange, peeled

3 Tablespoons plain nonfat Greek yogurt

1 Tablespoon Chia seeds

1/4 cup water

 

Combine all ingredients and blend for a minute or two. Ta da! Breakfast is served.
