CROCK POT CHICKEN! If you use it as 4 servings only 235 calories. I'm in the process of making it so it may actually make more than that.
1 lb chicken breast, 1 cup salsa, Season to taste recipe calls for 2 teaspoons each (i dont measure, I just sprinkle in) garlic powder, chili powder, cumin, red pepper, black pepper
(optional I added this in on a whim)
lime juice, 1/2 yellow onion, 1/4 purple onion (just bc I love them), 1/2 red bell pepper (bc they're delicious!)
-Put chicken in slow cooker, season
-Pour in salsa (i actually ran out of salsa and had to add some taco sauce, and decided to try a dab of sun dried tomato spread)
-Cook 6-8 hours. Use fork/knife to pull chicken apart.
I like slow cooker meals. It's easier for me to put stuff in and basically forget about it or put it all in a ziplock bag and throw in the morning so it cooks while I'm at work. I also like to make a lot then portion it out in ziplock bags for the week or freeze them for later.
