Pumpkin Spice Cookies
•1 cup pumpkin puree
•1/2 cup coconut flour
•2 tbsp melted coconut oil
•1 tbsp molasses
•1/2 tsp vanilla
•1 tbsp cinnamon
•1/2 tsp allspice
1/2 tsp nutmeg
1/4 tsp ground ginger
•1 egg
•1/2 tsp baking soda
1/4 cup coconut sugar *I didn't have some added 1/8 cup agave or honey
Directions:
1.In a mixing bowl add your pumpkin puree, coconut oil, egg, molasses, coconut sugar/honey or agave and vanilla then blend.
2.Next add in your dry ingredients and mix until you have a soft dough.
3.Pinch a walnut size piece and roll into a ball. Place on a piece of parchment paper on your baking sheet and press flat with your fingertips.
4.Repeat.
5.Bake in your oven at 350 degrees for 25 – 28 minutes. Remove and let cool. Enjoy!
