Here's a recipe that is super simple. I came up with it a few years ago when I kept craving pancakes and french toast but couldn't have them due to my dietary restrictions! I actually prefer these now over real french toast! :)
You will need:
3 slices Alvarado Street flax seed bread (low carb, fiber bread)
2 eggs or 4 egg whites
1/4 tsp vanilla extract
1/4 tsp cinnamon (pumpkin pie spice also works)
1 tsp stevia sweetener
nonstick spray (I use coconut oil spray)
Toppings: Walden Farms CALORIE-FREE maple syrup
(can also use berries, bananas, etc etc)
Mix eggs, vanilla, cinnamon, stevia. Dip slices of bread into egg mixture and let them soak. On medium-high heat, spray your nonstick in a pan and cook on each side until french toast is done.
