    I managed to make scallops with sautéed spinach and risotto for dinner. Just cook the risotto per the box instructions. I use a chicken stock instead of broth in the risotto. For the scallops - I used the small bay scallops. Make sure you dry them well, salt them, and sear them in a super hot pan. If the scallops were previously frozen, they will not sear. :( For the spinach - garlic, shallot, a little EVOO - cook that down and toss spinach to done.

    Just watch your portions on the risotto. It's so good and you will want more than you need!

    You can substitute the scallops for shrimp if you want.
