If you could eat your whole leg at once, I suppose you would briefly weigh the same. But could you eat the bones? They are part of the weight. And then you would digest the other bits, which burns off energy in the process, and eliminate a lot of it when you went to the bathroom. So depending on when you weighed-in you would end up weighing less.
