I made these mini egg frittatas for breakfast and snacks on low carb days.  I have not figure out macros for these.

 

i used:

 

1 pound bacon, cut into inch slices and fried up

2 links of hot Louisiana sausage, cubed and fried up

1/2 small brown onion

2 orange bell peppers, diced

 

I removed most of the bacon fat and sautéed the onion and bell pepper in about one TBS of remaining oil.

 

I tossed the bacon, sausage, bell pepper and onion in a bowl and mixed it up then added 1/3 cup to a large muffin tin or about 1/4 cup into a small muffin tin.  I added 2 tsp of feta chesese to the large muffin tins, and 1 tsp to the small muffin tins.  I left some with no cheese for my son.

 

Then eggs:  scramble the eggs (I must have used 12-18 - should have counted, but had to make more to cover all the muffins I made.).   Mix in a bit of ground oregano and salt/pepper.  Pour over the ingredients in the muffin tin until covered.  Can use egg whites in a carton (or eggs in a carton) if you want.  I just used what I had on hand.

 

Bake at 325 until set (20-30 mins).  Just check to giggly centers.  

 

Use she whatever veggies you have on hand:  spinach, mushroom, zucchini, etc.  also vary your cheese it fit your preference.
