Great long hike on Mt Rainier in the rain yesterday and 30 mile bike ride today. Sticking to around 1200 calories, too. Charting everything is working and the scale is going way down already. Yippie! Coming up with some favorite standby meals--high in fiber, protein, and big and filling. Tonight it was a tomato pasta bowl with artichoke hearts: 1 C high protein, high fiber pasta, 2 full cups of tomatoes, 1/2 can of artichoke hearts in water, and fresh basil and fresh ground pepper. I'm not hungry after that and two glasses of water, and still around 300 calories. Already planning meals for tomorrow, too. Things are stressful in my personal life, but managing this makes it better.

Sign in to CommentThanks a lot! I made it hot, but it would be great, too. I haven't tried mozzarella on it, but parm cheese is good so I'm sure that would be delicious!
your pasta dish sounds amazing. Is the dish cold or hot? I bet this would be awesome with some fresh mozzarella for a twist on a caprese pasta salad.
