Another of your blog posts that chimes with me :) I've been vegetarian since I was a student, some 10 years ago. For the last few years, I've been mostly vegan; I only eat milk or eggs when social occasions demand it. I didn't find the transition very hard, perhaps because I learned to cook vegetarian when I learned to cook for the first time, so I don't always think of "replacing" meat. However, I grew up in a family where we ate meat and fish (not every day though). If you feel that there is something missing, then I recommend visiting an organic / health store, and try some of their plant-based alternatives. Or even better, go to a vegetarian restaurant, try a few dishes (great if you go with a family), and if you particularly like something, just ask how they prepare the seitan, tempeh or tofu. If you're mostly concerned about health, then you're already doing great. If you want to explore our relationship with meat a bit more, I recommend Jonathan Safran Foer's "Eating Animals".
