I am not starving myself but I am watching every bite I eat!
For example, yesterday at lunch I had half a Haas Avocado diced up + 1 cup of chopped celery + 1/4 cup chopped onion + 1/4 salsa. I have to say that was low calorie, crunchy, tasty, and satisfying! I snacked on grapes through out the day. And I had roasted vegetables for dinner.
I usually have oatmeal + chia for breakfast but yesterday I had a banana.... then some raisins.... then another banana... and like 4 cups of coffee with a Tbl of sugar each... so low calorie = NOT... I also drank extra water yesterday and this morning I woke up 1.2 pounds LIGHTER!!! yes!!
I don't know if its a water drop or finally the scale is showing my effort in switching higher calorie foods for lower calorie choices. For example: Potatoe is 116 calories a cup VS Turnip is 36 calories a cup! Roasted the turnip doesn't taste exactly the same but it is quite nice when tossed with some low calorie balsamic salad dressing (roasted) and I can have 3 cups of turnips to one cup of potatoes in calories! For variety in roasted vegetables add chunks of carrots, celery and onion. All are low calorie and high flavor! They roast up in about 45min at 350degree oven in a greased pan.
Mushrooms would be a great addition to this vegetable roast but I didn't have any in the fridge. The night before last when I made this roast I poached an egg and placed on top for a nice looking plate to serve my husband. I will say that the creamy not solid yolk, made a nice sauce on the vegetables.
Good stuff! Since my journey this year, I have been doing much substitutions and I have to say that I am surprised at all the vegetables and fruits that I like today but would have never chosen a year before. No, in 2014 my idea of a diet meal was breaded fake chicken (we are vegetarians) tossed in some lettuce with beans and corn and coutons + tomatoes and onions and let's not forget the mayonaise!
Today, my salads are all the fresh vegetables I can find in a variety of colors. I love looking into my bowl of colors and saying, "Wow! Pretty!" I will chopped green lettuce + purple onion + orange carrots + white jicama + chopped green celery + dark green spinach leaves..... Ok now I am hungry!
Today I will drink more water + eat clean raw and healthy + some roasted vegies and no fat plain greek yogurt (with a TBL of sugar cause... I am human!)
