i am sugar free in coffee but my down fall is the powdered creamer that goes into it. Hubby likes the powdered crap!! I do try to use table cream or milk just because I cant drink it black. I have roasted broccoli and cauliflower and really enjoy it. I will add this to a squash of some sort. My favorite right now is butternut or an acorn. I am going to roast some root veggies tonight to go with the mini meatloaves I am making and even those will have some mixed peppers in them.Louise: what is Jicama?! I know I cant get it at my local store but maybe if I go to the city I can get it at the bigger grocery store. Just curious about it and how to use it.

Jicama is a root vegetable that looks similar to the coconut in size and shape, but not hairy. You peel it and slice and eat raw! Similar to a water chestnut in that if you cook it, it will remain crunchy! I add it to fruit salad that will sit in my fridge overnight and it soaks up all the fruity flavor. I think by itself it takes like an apple, but its a veg! You can also try it with chili powder and lime juice...its a fave in Mexico that way.
