Hey - this is a great prep-ahead meal/snack for a low carb day.  I make a big batch and freeze the cooled meatballs in mini snack bags (5 per bag.). Just reheat in the microwave and you are ready to go.

 

4 packages ground turkey

3 frozen boxes of chopped spinach, thawed and water squeezed out

1 cup diced yellow onion

2 whole eggs

2 egg whites 

1/2 cup grated Parmesan cheese

 

mix all ingredients in a large bowl well. (Mix by hand with clean hands!). Use a medium size cookie scoop to make meatballs in consistent sizes.  Put on a greased cookie sheet (or line with parchment) and bake at 375 degrees for 30 minutes.  Transfer to a cool container until cool, then freeze 5 per bag.
