WATER QUESTION: Sometimes I only have one cup before eating and I don't finish all my water, so I end up drinking a lot in the evening. (No matter WHEN I drink this huge amount of water water I have to do a night pee, so that's not an issue.) I know I should drink more in the daytime, but is squeezing it in at the end of the day still count? Will it still have a positive impact?

To a degree, but sometimes we feel hungrier when we’re dehydrated or thirsty, so might be missing some pre meal benefit.

I find if I drink a lot at night it will affect the scale vs getting all my water in my 7 or 8. Good job getting all of your water in!
