Hi, here is the black bean soup recipe you requested...I don't use exact measurements so bear with me. ;-)
For a big batch...about half a bunch of celery, 10-12 large carrots, 3 med onions, few cloves of garlic...I sautée all this in a large pan with some evoo. Once it cooks some and gets a little bit of "crust" I deglaze the pan with a little red wine. Afterwards I add 4 cans of rinsed, low sodium black beans, and lots of spices! I add cumin, coriander, chili powder, granulated garlic, cilantro, and whatever else I'm in the mood for. Lol. I also add vegtable broth because the beans will soak up a lot of liquid. Other than that I just let it simmer and add more spices to taste.
You can add more/less veggies or spices. If I have fresh cilantro I like to cut some of that up and add it when we eat a bowl of it, sometimes a little light sour cream too. Definitely a very filling, hearty soup. :-).
