So agree - you can't combine low fat and low carb - oh my! Healthy fats are so good for you (avocado, seeds, nuts in moderation, quality oils like coconut and avocado and olive). I have been eating around (it varies a bit) 50% fat, 20% carb, 30% protein - that is what I have my macros set to in MFP. Net carbs tend to be between 20 and 30 this way. I still have my cup of strawberries in my smoothie in the morning and tons of (non-starchy) veggies. Fiber is critical - make sure to get your fiber and lots of water or everything will just stop moving. I am going to do this for a little to achieve the lower end of my weight range and then re-incorporate more healthy carbs like sweet potato and quinoa and lentils. I do believe in eating the rainbow and a lot of colors get neglected when going very low carb. You can eat moderate carb and higher fat to maintain or even lose (carbs in the 50-150 range, not talking net, just carbs). Fiber grams should be at least 20-25 per day regardless.
