Hubs and I have definately fallen into a routine when it comes to the healthy eating and cooking thing. Things really do go better when we can cook a big batch of stuffs at the beginning of the week and then have leftovers for lunches and dinner throughout the week. It's so nice not to have to worry about what to make or if I have the energy for chopping.
I have a giant Ziploc bag I keep in the freezer that I through veggie odds and ends into. The bag was getting too big, so this morning I got down the stock pot and threw everything in. In a hour or so we should have 8 cups of vegetable broth. I want to make a lentil soup today, and maybe the curried cauliflower. I picked up some (stupidly expensive) yellow lentils at Whole Foods this week and want to find a dahl recipe too. Seriously, I don't know why I don't go down to Rainbow Grocery Co-op for stuff like that.
We've decided that one night a week we'll have an "off night." This usually involves going out to eat or meeting up with friends. It's a nice reprieve from eating at home the whole rest of the week. Last night we went to a friends house and even though the fare was healthy on the outside (lentil stew! roasted beets! onions and potatoes) there was a large amount of heavy cream, pastry crust, and butter involved. And some lemon pound cake.... mmmm... lemon pound cake. And three(!) kinds of cidre.
So, I'm up 1.1 pounds this morning. But that's okay. I'll drink extra water today. And go for a longer walk. I'm not super worried. One meal a week is not going to undo everything else.
