My husband and I actually do a pretty good job at eating healthy. He does a better job because he is the one with blood sugar issues. I say this because he has never been on insulin. Although about 7 years ago, due to a very weird eye exam, he had his blood sugar done at work and it was - over night fast - 253!!! EEEK!!! We did an immediate lifestyle change. And we manage his blood sugar nicely with diet, though it would be nicer to do it with exercise (which we have done in the past)
I on the other hand, have no such problem! I can eat cake, double icing and in two hours I am fine! Yes I have tested! And another drawback, as I tell him, is that I know how to cook and do math in my head. If I feel like a cookie at 2:30 in the afternoon, I can make 6 quite easily and then gobble them down even easier! -- Homemade cookies are heathy, right? --
I have been on some diet for most of my life and I posted a selfie from a few months ago from the 'WRONG' angle to show my CHINS! UG. I forget where this was taken but I think it was as we were walking to the National Cathedral from the waterfront. We took a tiny wrong turn and it ended up taking us 2 hours to get there by foot! OH YES I remember that day!
Let's get back to the CHINS and my post for today.

Now I made this for the most part last night in a huge 4 quart pyrex bowl. and it was wonderful
(changes half an onion; no zuchini;half a lettuce;no grape tomatoes; 2 regular tomatoes;)
I drenched it in italian dressing and let it sit in the fridge. (I tossed a couple of times) for 20 minutes or so while the fish fillets were cooking!) IT WAS WONDERFUL - but let's face it, almost a cup of Italian Dressing added like 1000 calories and even splitting it with my husband, that was a lot of calories for one meal!
MY PLAN, after I post a weighin picture will be to make this often but use DIET DRESSING!! OR, I found a recipe for the spices for Italian... maybe I can make my own diet recipe or just sprinkle with spices?
If I do - When I do - I will write a blog post and post a picture of it!
