Hi, I'm a flexitarian. About 80 to 85% of what I eat is vegetarian or vegan, but if I want some fish or chicken or anything once in a while I eat it. To get your husband's good cholesterol up you might take a look at how much cheese and eggs he's eating and go without those for a month or two. Dr Joel Furhman's book Eat to Live is pretty interesting. To keep track of drinking water you could use one drinking bottle and either put the number of rubber bands that you need to drink bottles of water and take one off each time you finish a bottle, or you could just add a rubber band to the bottle each time you finish one. If you but water in the plastic bottles you could put the bottle caps in a special cup or bowl and record it each day when your're finished.
