Someone asked for the recipe for the muffin pic I posted, so here goes! (...and I had posted from memory, forgetting a few ingredients...lol) I hope you like them as much as we do!
HEALTHY APPLESAUCE OAT MUFFINS
High Protein and High Fiber!
INGREDIENTS (Makes 24 muffins)
2 1/2 cups rolled/old-fashioned oats
4 apples, cored and pureed with skin
1 cup vanilla unsweetened almond milk
2 large eggs
2 teaspoons vanilla extract
8 tablespoons butter or coconut oil, metlted (I used coconut oil)
16 stevia packets (would be good with Splenda Brown Sugar Blend, too)
1 1/2 cups whole wheat flour
4 teaspoons baking powder
1 tablespoon cinnamon (I threw in a little extra since I love it)
1/2 teaspoon salt
2 cups vanilla high protein powder
OPTIONAL: 1 cup total add-ins such as dried cranberries or other dried fruit, raisins, nuts, chia seeds or flax seeds...whatever you like, be creative!
DIRECTIONS
1. Preheat the oven to 375 degrees farenheit. Line muffin tins with liners or spray with baking spray and set aside.
2. In a large bowl, mix together all ingredients except the flour, baking powder and salt.
3. Add flour, baking powder and salt and stir gently just until combined. Do not over-stir or muffins will be too dense and dry.
4. Distribute the batter evenly among the 24 muffin cups and bake for 15 to 20 minutes until a toothpick comes out clean. (I baked mine in a convection oven for 15 minutes, a few moist crumbs came out on the toothpick and when they cooled, they were perfect!)
5. Move muffins to a rack to cool completely. Once cool, I put in two large freezer bags and freeze, pulling them out one by one to put in my lunches or warm slightly for a snack!
