ISO filling meals for one. Low to little prep time ideal and photos and recipes are a plus

I like to prep a bunch of sautéed chicken and use it for salads, taco bowls, over cauliflower rice, or add different sauces.
I prep sheet pan veggies in the oven with a little olive oil and spices.
The best way to cut down on time is prep a bunch at a time.

Steam bag of cauli rice (or any frozen veg) and microwave cut up chicken sausage, add favorite sauce. Dinner and done! (My favorites are to have it with olive oil & nutritional yeast or tomato sauce & sprinkle cheese)
Frozen fish (they usually come portioned so you can select a serving size for 1) w/ a side of roasted veg
