  • A new week guys. We made it. You got this. I got this. We got this this weekend. I was sick and I did a lot of self-reflection and I prayed to God and I said thank you for allowing me to wake up another beautiful Monday morning. I'm slowly getting all of my feelings back. Moving in the water. I even drove inside of a storm just to be with the water. It's a beautiful thing if you haven't had a chance to try out water aerobics give it a try. You'll love it! We hit our goal. We're down to 492.8

  • Most days, I blend up a huge smoothie:

    2.5 cups kale (I freeze it and crush it up)
    2 bananas
    1 cup frozen mixed fruit
    1/2 cup frozen mixed berries
    1 tbsp flax seeds
    1 scoop protein powder
    2 cups almond milk
    The rest tap water, about 3–4 cups
    Originally, I drank it as a meal replacement for lunch. (It's been way too cold here in the morning to be excited about this in the morning.) I found myself crashing hard about an hour after drinking it.

    I looked it up, and it turns out eliminating the need to chew results in faster consumption, which leads to an insulin spike and, ultimately, a crash. So now, after I blend it, I split it into 3 mason jars and spread it out over several hours.

    Some days, I find myself craving something that’s not liquid, but for the most part, I feel satisfied all day and not even that hungry around dinner time.

Come again... You freeze the kale and then crush it when you need it? So it's frozen raw kale, not processed in any form? That's cool. I had no clue. Going to try it

Yummy! Frozen spinach works too, you really don't taste it.

Maybe consider having some of those berries/fruits with raw old fashioned oatmeal and almond milk like a granola? It really works, no cooking required and the oatmeal keeps you full for a long time. Not cooking it gives you something to chew, very helpful. My favorite breakfast.

  • Ok, I just found out an interesting fact that adds to my "why"!
    I have had knee issues since I was young, and now starting to get arthritis already (I am only in my early 40's), so this fact makes each pound lost even more of a victory! And yes, this week got back on track and already lost one of those pounds again!

  • I had been craving lasagna. I can't have pasta though, so I baked a mix of vegetables for about 30 min at 375 degrees (not roasted because we don't let them brown) and then place them in a baking dish with homemade spicy "pasta sauce" and vegan mozzarella. I baked them another thirty minutes at the same temperature. Yum! I didn't miss the pasta one bit. I realized that what I missed was the pasta sauce, not the pasta. I'm happy again.

DIET: Plant based whole foods allowing for the occasional egg whites and feta.
SCHEDULE: intermittent fasting 18:6
EXERCISE: none yet. Just more movement throughout the day.
STRESS RELIEF: Tea meditation, gardening, food prep, sleep 9pm-6am, time with beloved.
SUPPLEMENTS: Chinese digestive herbs, pea protein shake, vitamins, neuro supplements. Contest herbs work much better than probiotic, prebiotic and fire cider.
TREATS: 1 tbsp almond-chocolate butter, berries & labneh, herbal infusions.

  • I'm so excited!! When we started this challenge, I posted that I had some super high Liver panel results, and was very upset. I am happy to say that in 1 month, saying no to alcohol (2 drinks a night is what I was averaging in December...) adding in exercise, keeping an eye on fiber, and shaving off 6-7 lbs, I was able to drastically cut those numbers!! One back to normal, the other is really close!

  • Wow, woke up to a 3 lb weight loss over night. Which was 0.2 lbs below my goal of an overweight BMI (BMI <30). It's a bit annoying that Renpho is still rounding my BMI up to 30.0 and still calling me obese, but I'm gonna call it overweight and I will be walking around with my head held high today. Goal achived!
