  • Hubby wanted pizza last night so we made a homemade protein crust with chicken. It was so good and so much protein! Topped with mushrooms and onions and sausage. Highly recommend this crust!

Large can of chicken beast (recipe called for 2 but we used 1 large)
1 egg
1/4 c Parmesan cheese
We also added Italian seasoning

Bake for 30 mins on 375

Add sauce, bake for 8 minutes

Add cheese and toppings bake for 8-10 minutes

I also make this crust and it hits that need for pizza! Another great thing to do is roll them into balls and throw in air fryer for chicken meatballs..they freeze well and easy to grab when want a great snack or quick meal. Can chicken is good but fresh or frozen chicken breasts even better, just boil and shred!

  • Peeps, this week has been such a scale Rollercoaster. I started Monday at 208.5- 1lb away from my goal for this bet. Ate well, not perfect, worked out and by Wednesday the scale was 211.4. But.....I had a great victory.

    My old mindset would have just said "F this, I might as well eat what I want." But this looming deadline forced a shift. And I instead thought "How can I keep nourishing my body (and not starving myself, the other side of my all-or-nothing past) and get the scale moving down?" Because I knew water weight was a big part.

    Today was 208.4!!! I've got 1lb to go. Even if I don't make weight, I'm so proud of myself for the mindset change.

    What's your mindset victory?

My motto of the week is “break the spell”. Doomscrolling, break the spell. Reaching for wine in a stressful life, reaching for the Halloween candy at 3pm (and again after dinner). Trying to refocus, reconnect with me and break the spell of what’s not serving me well. Bummed the scale isn’t moving fast but my body feels good.
Hope everyone has a great weekend! It’s a long one for me so need to focus in on nutrition. They’ll be plenty of moving my body.

Dinner and done. No wine tonight, going to get in bed with my book and get up early for a busy day tomorrow. It’s not even 7:30 but I don’t care. Hope the scale starts moving. Have to keep a positive mindset and feel good about what I’m doing well.
