  • I need creative eggplant recipes. My garden has produced well over 100 of these beauties and is still producing!

    So far, I’ve used them in place of noodles for lasagna (really good), roasted them alone and with other veggies, grilled, put them in breakfast bowls, and eggplant parmigiana.

    I need more ideas to keep the fam from getting tired of them.

Try Moutabal - a lovely dip, I tend to put less tahini in for a healthier dip. Fab with veg crudités or as a base for veg/meat.

Hit a plateau this week. 2.6 away from my goal. Drinking tons of water, lots of protein, and avoiding my kids Halloween candy. Trying to push through the next two pounds but it gets discouraging.

Definitely don't backslide! Plateau is better than a gain! Keep it up. The scale will catch up. Add a little extra activity.

Weight loss after waiting for my husband (primary cook) to make dinner. He didn’t have a plan and wanted to get something out to bring home (pizza or burger/fried chicken place). I looked in the fridge and panicked bc I was out of fresh veggies, tomorrow being our shopping day. I went to the pantry and found a can of Amy’s chunky tomato bisque. Went to the freezer and found frozen zucchini. Rotisserie chicken that I always have in the fridge and made a LARGE bowl of “soup” with it all after roasting the zucchini in the oven. My husband kept commenting on how big the bowl of soup was. I said, I know! Leave me and my big bowl alone! It was so satisfying that I was dinner and done. Just had to share. Don’t give up if it isn’t easy, just keep looking for ways to stay the course💕

I put my kids candy away in the pantry and have made it this whole day without having a piece, as the past 2 days I had 2 pieces. Hide or throw out the candy!!!!

We did the switch witch with my kids and they left it (they got to keep a little for desserts, like 10ish pieces) by the front door and when they woke up they each had a new little toy. My oldest (7) has said sooooo many times “I’m so glad we left our candy for the switch witch!!”

My downfall is a sugary latte, more specifically Pumpkin Spice this time of year. Anyone have any suggestions of how to make it healthy? Or any recommendations of a healthy alternative/customization at popular coffee chains?

We got coffee pods at Sams that are pumpkin spice flavored. I add half and half, but you could add almond milk, stevia, honey, extra cinnamon etc.

I agree with Nicole. Find a creamer you like at the store and make your own. I am not tempted and my fave is pumpkin. I use the silk one

I need some advice!!! I am a vegetarian that eats eggs and dairy and some fish. I dont love fish. im tired of togu and veggie burgers and i struggle with making dinners delicious for me. i make my family delicious dinners (they eat meat) because i love to. Then im sitting atvthe table eating spaghetti squash with sace and a veggie patty. 😏

You can do a salad with blended cottage cheese for a dressing! Just blend with a little lemon and spices.

Quinoa is a good source of protein. I have swapped out quinoa for my Szechuan shrimp. You could try a quinoa veggie stir fry. Actually that sounds like something I will try too.

Yesterday, I was at 71% to my goal. Today… 29%!!! I’m a little discouraged and can’t really figure out what the problem is that made it jump. I’m trying to push the discouragement away because I have a feeling it’s just all due to hormones and being a girl! And I did eat later than I usually do last night.

So- 6 days left. Doesn’t mean I’m out for the count!!! Can’t forget the times that it’s jumped up and crashed back down the next day, so we’re preparing for that! And on that note, I gotta get to the store and buy some more veggies!
